Smoked Mackerel Salad Food Photography and recipe

In addition to being a professional Food Photographer in Berkshire, I'm also a very keen amateur cook so merging these two activities is a great deal of fun for me. Therefore I've decided on another goal for 2015 and thats to add to food ideas/ recipes to my blog that I've really enjoyed eating but to photograph and share them online.

My first effort is inspired by Scandinavian cuisine (original recipe was by Sweet Paul) that can be eaten for breakfast or lunch......enjoy and see the recipe below:

Serves 4:

  • 4 x Smoked Mackerel Fillets, forked into flakes
  • 3 tablespoons of mayonnaise
  • 1 tablespoon of fresh dill
  • 1 finely chopped celery stick
  • half a red onion finely chopped
  • 1 spring onion chopped
  • juice from 1 lemon
  • 1 hard boiled egg, quartered
  • Rye bread or cracker

Place all the ingredients (except the egg) into a large mixing bowl and add mayonnaise to create a consistancy that is not too dry but holds its shape. Add salt and pepper if required and serve on the rye bread with the 1/4 eggs on top with a sprinkling of extra dill
