Instant Pot Chicken Curry (Cook it Today)

CHICKEN CURRY

500g chicken breast, cut into bite-size pieces

2 onions, chopped

1 tbsp garlic-ginger paste

2 heaped teaspoons curry powder

1 tsp salt

500ml passata

½ x 400g can of coconut milk (ideally the thick and creamy part of it has separated)

Put all ingredients except the coconut milk into your Instant Pot – make sure the chicken goes in last so it doesn’t stick to the bottom whilst cooking. Secure the lid in place and press the ‘Poultry’ button. Set to 15 minutes on the timer. Use the QPR (quick pressure release) method at the end of cooking. Add the coconut milk and stir then serve. Serves 4.
